Morris Cuomo: I honestly wouldn't depend on soy too much, unless it's fermented like tempeh and miso. Almond milk is very healthy (vitamin E, etc.) and you should carefully plan to eat iron-rich foods with vitamin C rich foods so that you can absorb the iron. I'm not sure what kind of vegetarian you are, but since you mention all you are currently eating are salads and tofu, I'm guessing you don't eat eggs or cheese. If that's the case, then I can recommend a great cook book called "1000 Vegan Recipes" which I'm finding more and more invaluble. :) Even if you weren't veggie, it'd still be a good source of healthy cooking and meals. For breakfast (these are the sorts of things I eat):Kashi cereal w/almond milk with fruit (currently either an apple or orange)orToast w/almond butter with fruitor1 frozen waffle w/almond butter and (real) maple syrup with f! ruitFor lunch:chickpea and nori sandwich (with veganaise), roasted brussel sprouts and fruitorpeanut butter and jelly sandwich with raw carrots and hummus and fruitormiso soup with mushrooms (any), onions, and cabbage, with pretzels and hummus and fruitFor dinner:hoisin marinated tofu covered in panko crumbs and baked, veggie stir-fry with soy sauce and gingerorlentil soup with sweet potatoes, cabbage, onion, mushrooms (mild curry and cumin base), with a piece of bread and vegan butterorblack bean burritos with salsa, onion, corn, and tomatoes, and guacamole and spinach side salad. The link below should be helpful in finding and creating recipes. Don't be afraid to go to a health food store and find red miso, and try something new. The reason I like this meal plan is you can use it to maintain current weight, and it give healthy meals.
